The Ancho pepper is the dried version of the Poblano pepper. An immature Poblano is dark purplish green in color, while the mature fruits eventually turn a red so dark as to be nearly black. Anchos/poblanos are sweet and smoky. Their heat is mild (1,000-2,000 Scoville heat units). Poblanos are eaten fried, stuffed, or in mole sauces. They are also the pepper that is usually used in the popular chile relleno dish. Anchos can be used whole, in which case they are typically reconstituted by soaking them in hot water to soften them. Anchos are also sometimes ground into powder that is then used in spice rubs or for making mole, enchilada sauce, and chili. 100 days.

Ghost (Bhut Jolokia) Hot Pepper Seedling

In 2007, Guinness World Records certified that the Ghost Pepper (Bhut Jolokia) was the world's hottest chili pepper (although in 2011 it was superseded by the Trinidad Moruga Scorpion). In 2004, the Ghost Pepper was given a rating of 1,041,427 Scoville heat units. For comparison, Tabasco red pepper sauce rates at 2,500–5,000 units, and pure capsaicin (the chemical responsible for heat in pepper plants) rates at 16,000,000 units. Bhut Jolokia is used as a food and a spice, and in northeastern India the peppers are smeared on fences or incorporated into smoke bombs as a safety precaution to keep wild elephants at a distance. The Bhut Jolokia plant starts out slow but eventually makes tall plants, exceeding 4 feet in favored locations. The thin-walled, wrinkled, pointed fruits reach 2-3 inches in length, ripening mostly to red. 100 days. Eat at your own risk!

The habanero chili comes from the Amazonas region, and from there it was spread through Mexico. These peppers are very old; one domesticated habanero found at an archaeological dig in Peru was dated at 8,500 years old. Unripe habaneros are green, and they mature to orange and red. Typically, a ripe habanero chili is 1 to 2 inches long. Habanero chilis are very hot, rated 100,000 to 350,000 on the Scoville scale. 100 days.

Havasu Hot Pepper Seedling

This hot pepper variety produces conical-shaped fruits that are thick walled and about 2 inches long. The peppers change from a pale yellow to orange to red, and while they are usually harvested pale yellow, they can also be used orange or red. They are commonly stuffed like poblanos to make a spiced-up version of chile rellenos. Last summer we loved stuffing them with cheese and a bit of bacon before throwing them on the grill. With about 500 Scoville heat units, they are also excellent fried or pickled. 60 days.

The large, tall plants produce traditional, semi-flattened, mostly two-lobed fruits that average 7 inches in length. The serrano pepper is a type of chili pepper that originated in the mountainous regions of Mexico. The name of the pepper is a reference to the mountains (sierras). The large plant is very prolific, especially in the late summer. A single plant can yield dozens of club-shaped peppers that can be harvested while they are green or red. The Scoville rating of the serrano pepper is 10,000 to 25,000. They are typically eaten raw and have a bright and biting flavor that is notably hotter than the jalapeno pepper. Serrano peppers are commonly used in pico de gallo and salsa, as the chili is particularly fleshy when compared with others, making it ideal for such dishes. This favorite old Japanese variety is small, slender, and about 3 inches long. The name refers to the fact that the tip of the chili pepper looks like the head of a lion. Although it turns from green to red upon ripening, it is usually harvested while green, when it is milder and sweeter. About 1 in every 10 peppers is hot. For cooking, a hole is poked in the pepper beforehand to keep expanding hot air from bursting the fruit. It may be skewered and then broiled or grilled or pan-fried in oil, or simply eaten raw. 60 days.
